The Serra da Estrela Cheese (PDO) São Gião is produced at Quinta do Tinte, in Santiago, Seia. Serra da Estrela cheese is the product obtained by slow depletion of the curd after coagulation of the raw sheep's milk (ie, without any thermal and / or chemical treatment) obtained exclusively through the milking of Bordaleira or the Churra Mondegueira breed, by the thistle (Cynara Cardunculus, L) and coming from the demarcated region.
It has a low cylinder shape, regular with lateral bulging and a little on the upper side without defined edges and semi-soft. closed, moderately buttery, deformable to cut, well attached, creamy and unbleached, with few or no eyes. White or slightly yellowish in color. Aroma and flavor with a soft, clean and slightly acidic boquet. -Producer
